Celebrate Easter with an extravagant holiday brunch buffet at Hyatt Regency Coconut Point! The holiday meal will be available on Sunday, April 5, between 10:30AM and 3PM, with the final seating at 2:30PM.

Menu highlights include breakfast bar with made-to-order omelets and a French toast station. Guests can also enjoy a selection of charcuterie and artisanal cheeses, a salad station with fresh local greens, and an impressive seafood display featuring fresh poached jumbo shrimp, oysters, sushi and sashimi selections, and more.

Entrée selections will be prepared in the restaurant’s open kitchen, including a seared market catch of the day, carrot ginger bisque with saffron cream, and pork tenderloin stuffed with spinach and gruyere cheese finished with cherry demi-glace. The chef-attended carving station will feature a slow-roasted peppered prime rib of beef, traditional Easter ham served with pretzel rolls and stone-ground mustard, and roasted leg of lamb with rosemary and sea salt accompanied by black garlic mashed potatoes.

To conclude the meal, guests can indulge in more than a dozen house-made desserts including Southern banana pudding cups, carrot cake, strawberry mousse tartlets, bird nest cookies, mini beignets, raspberry-lemon cream puffs, and several other sweet treats prepared by the resort’s pastry team.
